The top 5 exporters of traditional caviar by overall sales are mainland China, Italy, France, Germany and Poland. Combined, those leading exporters generated about three-quarters (75.2%) of global sales for traditional caviar.
Falling well below two-thirds of its global total, the 5 major exporters of caviar alternatives accounted for a lesser concentrated percentage (62.7%) of worldwide exports by value. The main shippers of caviar alternatives are Belarus, Japan, mainland China, Germany and Denmark.
